PICKLES!!!!



I pickled! Pickled pickles! Well, I suppose technically pickled cucumbers to create pickles...whatever. It's all fun to say! I found a bunch of pickle recipes, I decided for my first time out to start with a pretty simple one, one that I had everything for in my pantry. Next I want to try bread and butter pickles, I need to pick up some celery and mustard seed. I really want to start a collection of cool jars to do stuff like pickling and making jams and stuff in, but Chako is going to need to build me some more shelving for that, the tiny kitchen is starting to implode. The only solution is to start building...up.


Ingredients!

Baby Cukes

Mix n' Salt

Pour pickling solution on top!

Stick it in a jar and throw it in the fridge. Yum!


This morning we tried some, TASTY! Going to throw them on some burgers tonight.

Easy Refrigerator Pickles

You'll Need...
3 cups of mini cucumbers, sliced 
1 cup of onions chopped
1 cup of green bell peppers chopped (optional, I omitted...just cause I didn't have any)
1 cup distilled white vinegar
2 tbsp salt
1 1/2 cups of white sugar

Chop of your veggies! Throw them in a large bowl and cover them with 1 tbsp salt. Let that sit while your prepare the liquids. In a saucepan, combine the vinegar, sugar and the other tbsp of salt. Boil until the sugar is dissolved, about 10 minutes. Pour over the veggies. Put the whole combination into an airtight jar and refrigerate for at least five hours, over night is best! Enjoy!
